Anyone who has visited the Basque Country, eaten at a Basque restaurant or attended a Basque festival can attest to the importance that Basques place on fine-cooked cuisine.

One aspect they pride themselves on is using high quality, fresh ingredients. Marmitako, Chipirones en su Tinta and Kokotxas al Pil-Pil are just a few of the many seafood and fish dishes that developed in the coastal region. Sheep, cows and pigs are raised in the more mountainous farming region, where you will find different types of sausages (txistorra, lukainka), txuleta (steak) and lamb stew known as txilindron.
